Mr. Eastwick-Field lived and worked throughout Mexico for 10 years, starting at The Leon Rojo Bar and Restaurant in Mexico City as Manager and then took on assignments in the following areas:
Managed 7 restaurants and bars at the Hyatt Regency, a 700-room resort, and managed the food and beverage operations of the Holiday Inn, a 500-room resort.
- Cabo San Lucas
As General Manager, opened and operated the first international chain hotel, the Hyatt Cabo San Lucas.
Later, both principals were involved in the opening and operation of the Renaissance Cancun Resort.
Opened and managed the food and beverage operation of the El Tapatio City Hotel.
- Puerto Vallarta
Managed the food and beverage operation of the Westin Camino Real.
